New recipes are sometimes a gamble, especially when you are using unfamiliar ingredients. With my family, if I am introducing something new and it doesn't go over well with their taste buds, then the chances of getting them to try something again, even if it is a different recipe, is slim!
I am happy to say though that this one went over amazingly well! The mix of ingredients sounded a little weird and I was nervous about it, but OH MY GOODNESS!

Here is the recipe:
Snap Peas, Fennel and Feta Delight
1 fennel bulb, cut into thin slices
1/4 cup extra virgin olive oil
2 tbsp chopped fresh basil leaves
salt and pepper to taste
1/4 cup crumbled feta
Fill a saucepan halfway full with water and bring it to a boil. Add the snap peas and fennel and cook just until they begin to become tender, about 4 minutes. Strain the water off into a colander and run the snap peas and fennel unter cold water to stop them from cooking.
Return the empty pan to the stove and set the heat to medium. Pour in the olive oil and let it heat up for a minute or two, then return the snap peas and fennel to the pan. Season with basil, salt and pepper and cook and stir until mixed and warmed through.
Transfer to a serving dish and toss with feta cheese. Serve warm. YUM!

So don't let the ingredients scare you. This one is soooo- fabulous!!! You really MUST try it! It accompanied our meal quite nicely with some grilled meat and wild rice.
